60” Commercial Brick Pizza Oven – Form-Free Construction.

Dome for this 60” net baking space commercial pizza oven is built completely form-free. This technique is only possible keeping most joints within 1/8”. It results in very tight, attractive, clean and extremely stable dome – ideal for commercial environment. Oven proportions and shape is classic for true Neapolitan-style pizza ovens. Dome’s height at peak: 18”, dome thickness: 4.5”, hearth thickness: 2.75”. Hearth material: 12”x12”x 2 ½” high-heat duty firebrick tiles. Entire hearth is set in clay mortar separated from the dome with continuous expansions joint, so any tile in the hearth can be easily replaced if required. The dome has steel harness at the skew course. Although force is distributed along the dome in such way that the dome is stable even without the harness, we consider this inexpensive feature an additional peace of mind guarantee for its integrity for many years to come. In our opinion, it is well-worth of a little extra effort and a little extra expense.
